| Vérité at home : MOULES MARINIERES |
| I am thrilled to introduce Verite at home, a series of some of my favourite recipes that readers will discover in the next few issues of Gr8life. It was only right to start with my absolute fabourite, Moules marinieres. This dish is everything I am about, simple cooking, straightforward, comforting, stylish and absolutely delicious. |
| Suitable for a starter for 4 or a meal for 2. It is important when you prepare fresh mussels to remove any that are chipped or already opened prior to cooking. Once cooked, it is also very important to remove any who are not opened. |
| Ingredients |
| 2lb fresh and clean mussels |
| 4 shallots, finely chopped |
| 2 cloves of garlic, crushed or minced |
| 1/2 a leek finely chopped |
| 1 carrot finely chopped |
| 2 tablespoons of finely chopped parsley |
| 250ml of fresh whipping cream |
| 1 glass of good dry white wine |

| Method |
| 1.Wash mussels and remove any barnacles. Discard any opened mussels. |
| 2. In a deep casserole dish fry off on a medium heat the shallots, garlic and leek with a touch of oil, for a few minutes, taking care not to colour the vegetables. |
| 3. Add the mussels and white wine. Turn up the heat, put a lid on dish and cook for two or three minutes shaking the pan every so often. |
| 4. Add cream and parsley and replace lid. |
| 5. Boil mussels for five minutes until the shells are open. |
| 6. Serve immediately. |
|
| Serve with warm crusty bread. |
| Drinking suggestion: A dry white wine like a Muscadet, well chilled. |
